Chef Zarate Pines for Pigs’ Feet …

Buzz-generating Chef Ricardo Zarate (who won Food & Wine’s Best New Chef in America and runs the hugely popular new Picca in Los Angeles) is one of my new favorites … as is his Picca Restaurant.  Chef Zarate took part in an inspiring cooking demonstration at The Art of Mixing evening at The Taste in Los Angeles, joining legendary Chef John Rivera Sedlar (Rivera, Playa) and Mixologist Julian Cox (Picca, Rivera, Sotto) for the demo.

I’m in love with Chef Ricardo’s Picca.  I’m equally impressed with his background.  After growing up in Peru,

  • He honed his culinary skills at some of the top restaurants in London.
  • In 2009, he opened Mo-Chica in Los Angeles (voted the 4th Best Restaurant in Los Angeles by Los Angeles magazine).
  • In August 2010 Ricardo began what he calls his “pop-up on steroids”: Test Kitchen.
  • In March 2011, he was awarded Food and Wine magazine’s “People’s Edition” award for Best New Chef.

I was dying to know what would make his DeathbedFood list.  Without a moment’s thought, he said he loves Pigs’ Feet with stewed potatoes and grilled chorizo.  Apparently, he had that as a Special at Picca recently and he just couldn’t get enough of it.  I know what you mean, Chef … I feel that way about almost everything I tried on Picca’s menu so far!
